Shurpa Shurpa is an Uzbek soup. You may add ingredients you want to shurpa, and its taste will be only better.Shurpa must be prepared a long time and thats why in result its with large fat content, with saturated taste, and spices, garlic and greens give it excellent aroma. Shurpa is a splendid soup on hunting or walking-tour.
 Preparation details:Cut the mutton with the bones, put to the cauldron, fill with cold water, boil, stew a pinch of salt, remove the scum, add red and yellow onion (thin rings), boil again. The meal is prepared on small fire in 30 minutes. Add carrot, pungent pepper as a whole, gently crumbled zyra and coreander, fat tail (with small cubicles). After one hour add sweet pepper (with halfrings), tomatoes, apple, boil 30 minutes. Remove the bones, cut off the meat and put it back into the cauldron, salt, pepper, add shredded greens, white onion (thin rings). Serve at once.
For 4-5 portions:
1 kg of mutton; 50 gr of fat tail; 1-2 sweet pepper; 1 pungent pepper; 1 white, yellow and red onion; 2 carrots; 2 tomatoes; 1 sour-sweet apple; greens by taste; 1 tea-spoon of zyra and coreander; salt, black pepper
