Way of preparation: Make a stiff dough from flour, water and salt, leave it
for 2-3 hours for swelling of the gluten, than roll it out to long flat plaits, tear out thin pieces as for
dumplings, put them to the boiling salted water and boil 10 minutes. Then you
need to prepare a sauce. Cut the meat in shape of small cubicles, fry it with
shredded large onion and turnip, add some tomato-paste, pepper, vinegar, fill
it up with the bullion and stew. 10 minutes before the preparation is finished
add bay leaf. Fill the boiled dumplings with sauce, add garlic, put it to a
stove and reduce to boiling. Before serving strew the meal with shredded
greens.
Ingredients for 4 portions:
Wheat flour 400 gr, pinch of salt, water 1 glass, beef (or mutton) 660 gr,
melted fat 60 gr, 2 large onions, puree of tomato 1 table spoon, vinegar
1 table spoon, 1 turnip, garlic 23 cloves, beef tea 4 glasses, parsley
green 12 gr, bay leaf, black pepper by taste.
